I don't really have any favorite "New Mexican" dishes. I'm a very un-New Mexican person. But if I have to choose a food it would be  Navajo Fry Bread.  This is a very traditional type of food for Navajo people. My dads side of the family is Navajo so we eat this a lot. it goes great by itself with sugar or a a Navajo taco. This originated in Arizona/New Mexico.

  1. Fry bread is actually a relative of the sopapilla, which can be traced back to Spain and ultimately to North Africa, but it is most certainly a staple in the Southwest :)
