| Cheese Enchiladas |
My favorite New Mexican food happens to be enchiladas. They are typically comprised of tortillas, meat, chili sauce, cheese, and other ingredients. Originating in Mexico, the enchilada was first developed by the Aztecs living there. The tortilla, in particular, was also created by the Aztecs.
