My Favorite New Mexican Food

Los Tamales Rojos De Chile Con Cerdo
(Red Chile Pork Tamales)
Tamales are a traditional Mesoamerican dish made of masa (a corn based dough), which is steamed or boiled in a corn husk wrapper. The wrapping is discarded before eating. Tamales can be filled with any meat, cheese, fruit, vegetables, chile. (if you go for either having the tamale as a meal, dessert, or if you're a vegetarian) Tamales have been around since as far as the Ancient Mayan people, who mainly made tamales for feasts them for feasts. (so since about 8000 BC) Originally the Mayan people called corn tortillas and tamales utah Aztec and Mayan civilizations, as well as the Olmecas and Toltecas who came before them, used tamales as an easy to go food because that's what they usually would make them to support their armies. In Mexico, tamales begin with a dough made from hominy which is called masa, or a masa mix Tamales are generally wrapped in corn husks or plantain leaves before cooking, depending on the region from which they come. They usually have a sweet or savory filling and are usually steamed until firm. Tamales are a favorite comfort food in Mexico, eaten as both breakfast and dinner, and often accompanied by hot atole or champurrado and arroz con leche (rice pudding) or maize-based drinks with indigenous origin. Street vendors serve them from huge, steaming, covered pots called tamaleras. In Mexico City, the tamale is big enough to keep a person satisfied until Mexico's traditional late lunch hour..
